Welsh Rarebit With Bacon Marmalade
Bacon Marmalade Rarebit is best enjoyed at breakfast.

Ingredients
For the marmalade:
- 15 ml butter
- 1 small onion, finely chopped
- 800 g bacon, cut into small pieces
- 2 cloves garlic, finely chopped
- 1 ml ground ginger
- 125 ml instant coffee
- 125 ml white vinegar
- 60 ml Huletts Golden Syrup
- 60 ml brandy
- 125 ml Huletts Brown Sugar
For the rarebit:
- 225 g cheddar cheese, grated
- 15 ml butter
- 10 ml Worcestershire sauce
- 10 ml mustard powder
- 10 ml flour
- Pinch of pepper
- 60 ml milk
- 4 slices ciabatta or bread of your choice
- Rocket, to garnish
Method
- For the marmalade: Melt the butter over a low heat and fry the onion until softened.
- Add the bacon, garlic and ginger and fry until the bacon turns golden brown.
- Add the remaining ingredients, bring to the boil and then simmer for 30 minutes or until the liquid forms a syrup or jam like consistency. Set aside to cool.
- For the rarebit: Place the cheese, butter, Worcestershire sauce, mustard, flour and pepper in a saucepan.
- Mix well and then add the milk.
- Stir over a gentle heat until the cheese and butter have melted. Once the sauce has thickened, stop stirring and leave to cook a little longer.
- Toast the bread on one side only and place, toasted side down, on a plate.
- Top the untoasted side with 2-3 tablespoons of the marmalade.
- Spoon the rarebit over the marmalade and brown under a hot grill.
- Garnish with rocket to serve.
