Welsh Rarebit With Bacon Marmalade

Ingredients

For the marmalade:

  • 15 ml butter
  • 1 small onion, finely chopped
  • 800 g bacon, cut into small pieces
  • 2 cloves garlic, finely chopped
  • 1 ml ground ginger
  • 125 ml instant coffee
  • 125 ml white vinegar
  • 60 ml Huletts Golden Syrup
  • 60 ml brandy
  • 125 ml Huletts Brown Sugar

For the rarebit:

  • 225 g cheddar cheese, grated
  • 15 ml butter
  • 10 ml Worcestershire sauce
  • 10 ml mustard powder
  • 10 ml flour
  • Pinch of pepper
  • 60 ml milk
  • 4 slices ciabatta or bread of your choice
  • Rocket, to garnish

Method

  1. For the marmalade: Melt the butter over a low heat and fry the onion until softened.
  2. Add the bacon, garlic and ginger and fry until the bacon turns golden brown.
  3. Add the remaining ingredients, bring to the boil and then simmer for 30 minutes or until the liquid forms a syrup or jam like consistency. Set aside to cool.
  4. For the rarebit: Place the cheese, butter, Worcestershire sauce, mustard, flour and pepper in a saucepan.
  5. Mix well and then add the milk.
  6. Stir over a gentle heat until the cheese and butter have melted. Once the sauce has thickened, stop stirring and leave to cook a little longer.
  7. Toast the bread on one side only and place, toasted side down, on a plate.
  8. Top the untoasted side with 2-3 tablespoons of the marmalade.
  9. Spoon the rarebit over the marmalade and brown under a hot grill.
  10. Garnish with rocket to serve.
