Ingredients

Rocky Road caramel popcorn

  • 400g Huletts white sugar
  • 240ml Huletts golden syrup
  • 1 cup water
  • 2 tsp bicarbonate of soda
  • 10 cups popped popcorn kernels
  • 2 cups salted nuts
  • 2 cups mini marshmallows
  • 100g dark chocolate, melted

Method

  1. Grease and line a baking tray.
  2. Place the sugar, syrup and water into a large saucepan and stir together over low heat until sugar dissolves.
  3. Once dissolved, bring to a boil, then simmer until the mixture reaches 140°C (or hard crack).
  4. Remove from the heat, whisk in the bicarbonate of soda and allow the mixture to froth up.
  5. Quickly stir in the popcorn and nuts to coat with the caramel, then place onto the tray before sprinkling with the marshmallows, then leave to set completely.
  6. Drizzle the melted chocolate over the popcorn, then leave to set.
  7. Break up the popcorn, before serving.

Test Baking Powder for freshness

Add half a teaspoon of baking powder to 2 tablespoons of warm water. This should cause an instant reaction with bubbles and foam. If not, then the baking powder is not fresh.
