Roast Stuffed Butternut

This delicious meal is perfect for lunch time!

Ingredients

ROAST STUFFED BUTTERNUT

  • 1 medium butternut
  • 30 ml olive oil
  • 45 ml soy sauce
  • 30 ml Huletts Brown Sugar
  • 30-40 g roasted cashew nuts
  • ½ onion, thinly sliced
  • 1 grilled chicken breast, cubed
  • 50 g feta
  • A few sprigs of parsley, chopped

Method

  1. Preheat the oven to 200°C.
  2. Slice the butternut in half lengthways and scoop out the seeds.
  3. Microwave on high for 10 minutes.
  4. Remove and place on a baking tray.
  5. Brush the butternut with the oil.
  6. Mix the soy sauce, sugar, cashew nuts, onion and chicken.
  7. Fill the butternut cavities with the chicken mixture and top with feta.
  8. Bake for 25-30 minutes or until golden brown.
  9. Sprinkle with chopped parsley when ready to serve.
