The cordial can be used as a drizzle over ice-cream.

Ingredients
Cordial
- 500ml Huletts White Sugar
- 500ml pomegranate or Cranberry juice
- Drop of food colour
- 1 to 2 dashes rose or orange blossom water
Citrus Jellies
- 3 Oranges
- Approximately 250 ml Pomegranate or Cranberry juice
- 45 ml Huletts sugar
- 15 ml gelatine
Method
Cordial
- Place sugar and juice in a saucepan.
- Stir over low heat to dissolve the sugar. Bring to the boil and then cover and simmer for 10 -15 minutes.
- Allow the mixture to cool. Add the rose water and a little food colour if needed.
- Place in a clean glass bottle.
Citrus Jellies
- Cut the oranges in half.
- Juice the oranges keeping the shells. You will need to remove the pith with a knife or spoon.
- Strain the juice and place it in a measuring jug. Fill up the jug with the juice to the 2 cup measure.
- Warm the juice in a saucepan with the sugar and gelatine until it is dissolved.
- Place the ½ shell oranges in a muffin tin for balance and fill with the gelatine juice.
- Place in the fridge to set.
- Once set cut into segments.
Preparing the drink
- Place 30 - 40 ml of prepared cordial in the bottom of the glass.
- Using the back of a spoon pour the orange juice over the cordial to make 2 defined shades in the glass.
- Add ice if desired and serve with a swizzle stick or long spoon with the jellies on the side.
