Orange Glazed Chicken and Couscous

Ingredients

Chicken:

  • 6 - 8 chicken thighs, with skin
  • salt and ground black pepper
  • 30 ml (2 T) olive oil
  • 15 ml (1 T) lemon juice
  • 30 ml (2 T) orange juice
  • 6 cloves of garlic, peeled
  • 15 ml (1 T) Huletts Molasses
  • grated peel of 2 oranges
  • 30 ml (2 T) olive oil
  • a handful of oregano leaves, to serve

Couscous:

  • 500 ml (2 cups) couscous
  • 500 ml (2 cups) hot chicken stock
  • 3 spring onions, sliced diagonally
  • 3 oranges, segmented
  • 250 ml (1 cup) Orange and Sesame Seed Dressing (see page 57)

Method

  1. Preheat the oven to 180°C.
  2. Chicken: Heat the oil in a large frying pan on medium to high heat. Season the chicken pieces with salt and pepper. Place the chicken, skin side down, in the pan and fry for 5 - 7 minutes on each side until golden brown. Place in a roasting tin.
  3. Combine the lemon and orange juice, garlic, molasses, orange peel and olive oil.
  4. Pour the marinade over the chicken and roast for 40 minutes.
  5. Couscous: Place the couscous in a bowl and add the stock. Cover and set aside for 20 minutes.
  6. Add the spring onions, orange segments and dressing to the couscous and toss through using a fork.
  7. Sprinkle the chicken with the oregano leaves and serve with the couscous salad.

Top tips

Keep it clean.

Avoid bacteria build up on your cutting board. Cut a lemon in half and coat the exposed side with coarse salt. Then, use it to scrub your cutting board and rinse clean.
