Mexican Corn Soup

Mexican Corn Syrup, best enjoyed at lunch time!

Ingredients

For the soup

  • 45 ml sunflower oil
  • 1 onion, finely diced
  • 2 garlic cloves, minced
  • 1-2 stalks celery, thinly sliced
  • 5 ml cumin, ground
  • 2 x 400 g cans of whole peeled tomatoes
  • 60 ml chipotle sauce
  • 4 sachets Huletts Sucralose
  • 5 ml salt
  • 2 ½ ml pepper
  • 400 g can red kidney beans, drained and rinsed
  • 400 g can corn kernels, drained and rinsed

For the guacamole

  • 1 avocado, ripened
  • 5 ml lemon juice
  • ¼ red onion, finely diced
  • 1 tomato, chopped and deseeded
  • Salt and pepper, to taste

To serve

  • 125 ml sour cream
  • 1 bag of plain corn chips or nachos
  • Handful of fresh coriander
  • Black sesame seeds, to garnish
  • 1 lime, cut into quarters

Method

  1. For The Soup:
  2. Heat the oil over medium heat.
  3. Fry the onion and garlic for a couple of minutes until soft, and then add the celery and stir.
  4. Fry for a further 2 minutes before adding the cumin.
  5. Add the tomatoes, lower the heat and simmer for 10 minutes until the mixture has reduced.
  6. Stir in the chipotle sauce, sucralose, and salt and pepper. Continue to simmer for a further 10 minutes.
  7. Add the beans and corn, and leave on the heat until warmed through.
  8. For the Guacamole: Mix the avocado, lemon juice, red onion, tomato, salt and pepper.
  9. Serve the soup topped with the guacamole, sour cream, nachos, coriander, black sesame seeds and a wedge of lime.
  10. Serving suggestion: For a special occasion, serve this soup in espresso cups or shot glasses as a delicious canapé.
