Ingredients
For the soup
- 45 ml sunflower oil
- 1 onion, finely diced
- 2 garlic cloves, minced
- 1-2 stalks celery, thinly sliced
- 5 ml cumin, ground
- 2 x 400 g cans of whole peeled tomatoes
- 60 ml chipotle sauce
- 4 sachets Huletts Sucralose
- 5 ml salt
- 2 ½ ml pepper
- 400 g can red kidney beans, drained and rinsed
- 400 g can corn kernels, drained and rinsed
For the guacamole
- 1 avocado, ripened
- 5 ml lemon juice
- ¼ red onion, finely diced
- 1 tomato, chopped and deseeded
- Salt and pepper, to taste
To serve
- 125 ml sour cream
- 1 bag of plain corn chips or nachos
- Handful of fresh coriander
- Black sesame seeds, to garnish
- 1 lime, cut into quarters
Method
- For The Soup:
- Heat the oil over medium heat.
- Fry the onion and garlic for a couple of minutes until soft, and then add the celery and stir.
- Fry for a further 2 minutes before adding the cumin.
- Add the tomatoes, lower the heat and simmer for 10 minutes until the mixture has reduced.
- Stir in the chipotle sauce, sucralose, and salt and pepper. Continue to simmer for a further 10 minutes.
- Add the beans and corn, and leave on the heat until warmed through.
- For the Guacamole: Mix the avocado, lemon juice, red onion, tomato, salt and pepper.
- Serve the soup topped with the guacamole, sour cream, nachos, coriander, black sesame seeds and a wedge of lime.
- Serving suggestion: For a special occasion, serve this soup in espresso cups or shot glasses as a delicious canapé.
