Ingredients

Maple and mustard chicken

  • 8 chicken pieces
  • Salt and pepper
  • 1 lemon, zested and juiced
  • 3 cloves garlic, finely crushed
  • 4 tsp grain mustard
  • 1 tsp Dijon mustard
  • ½ cup Huletts Maple Syrup
  • 2 Tbs olive oil

Method

  1. Preheat oven to 200C
  2. Place the chicken into a roasting dish, then season with salt and pepper
  3. Mix together the lemon juice, zest, garlic, mustards, maple syrup and olive oil
  4. Pour sauce onto the chicken, then toss well. Cover with foil, then place into the oven and roast for 30 minutes.
  5. Remove the foil, then return to the oven and cook for 20 minutes until the sauce becomes sticky and reduced.

Top tips

Keep it clean.

Avoid bacteria build up on your cutting board. Cut a lemon in half and coat the exposed side with coarse salt. Then, use it to scrub your cutting board and rinse clean.
