Lemon Semolina Syrup Drizzle Cake
Our scrumptious Lemon Semolina Syrup Drizzle Cake is a fluffy, moist and sticky syrup cake with a light citrus taste.

Ingredients
Cake
- 125g butter, softened
- 15ml finely grated lemon rind
- 250ml Huletts Castor Sugar
- 2 eggs
- 165ml semolina
- 375ml self-raising flour, sifted
- 2ml salt
- 125ml milk
Lemon Syrup
- 250ml Huletts Maple Syrup
- 125ml fresh lemon juice, strained
- 1 small lemon, thinly sliced
Method
Cake
- Preheat oven to 180°C/160°C fan-forced.
- Grease a 6cm-deep, 20cm round (base) springform cake pan. Line base and side with 2 layers of greased baking paper.
- Using an electric mixer, beat butter, lemon rind and sugar on high speed until pale and creamy.
- Add eggs, 1 at a time, beating between each addition.
- Stir in the semolina, flour, salt and milk.
- Place mixture in the prepared pan and spread evenly.
- Bake for 45 to 60 minutes or until a skewer inserted into the centre comes out clean.
Lemon Syrup
- Place syrup and lemon juice in a saucepan over low heat.
- Cook, stirring, for 2 minutes or until dissolved.
- Add lemon slices. Increase heat to high. Bring to the boil. Boil, without stirring, for 4 to 5 minutes.
- Transfer lemon slices to a plate. Pour half the syrup over the hot cooked cake.
- Stand for 15 minutes.
- Turn out onto a plate.
- Arrange lemon slices over the cake. Serve with remaining syrup.
