Ingredients

GINGER CRUNCHIES

  • 220 g breakfast oats
  • 1 cup Huletts White Sugar
  • 75 ml desiccated coconut
  • 120 g cake flour
  • 2 ml salt
  • 15 ml ground ginger
  • 80 g pumpkin seeds
  • 40 g sunflower seeds
  • 30 g chopped or flaked almonds
  • 125 ml Huletts Golden Syrup
  • 225 g butter
  • 5 ml bicarbonate of soda

Method

  1. Preheat oven to 180˚C.
  2. Grease a 25 cm x 25 cm baking tray and dust lightly with flour.
  3. Combine all the dry ingredients in a large bowl.
  4. Melt the syrup and butter together.
  5. Remove from the heat and add the bicarbonate of soda.
  6. Add the syrup mixture to the dry ingredients and mix well.
  7. Press into the baking tray and bake for 25 minutes until golden brown.
  8. Allow to cool on the baking tray.
  9. Once cooled cut into the desired sized squares.

Using cookie cutters, create a heart shaped sandwich and change shapes daily. The fruit may be assembled in the shape of a flower.
