Ingredients

Choc Bran Muffins

  • 70 g Huletts White Sugar
  • 150 g butter
  • 2 XL eggs
  • 70 ml sunflower oil
  • 350 g Greek yoghurt
  • 180 g Beacon Heavenly Forest Fruit and Nut slabs
  • 120 g Golden Cloud cake flour
  • 100 g wheat bran
  • 12½ ml baking powder
  • 5 ml bicarbonate of soda
  • Pinch of fine salt
  • 15 ml cinnamon, ground

Method

  1. Beat the sugar and butter until light and creamy.
  2. Add the eggs, one at a time, mixing well after each addition.
  3. While beating, slowly add the oil.
  4. Add the yoghurt and the chocolate.
  5. Sift the dry ingredients together and mix into the wet ingredients.
  6. Spoon the mixture into standard cupcake cases. Fill each case ¾ full
  7. Bake for 15-20 minutes or until a skewer comes out clean.

Top tips

Lighten up…

Cream your sugar with your butter or margarine VERY WELL, as this incorporates air into the mixture, which contributes to a much lighter baked product.
