Ingredients
Choc Bran Muffins
- 70 g Huletts White Sugar
- 150 g butter
- 2 XL eggs
- 70 ml sunflower oil
- 350 g Greek yoghurt
- 180 g Beacon Heavenly Forest Fruit and Nut slabs
- 120 g Golden Cloud cake flour
- 100 g wheat bran
- 12½ ml baking powder
- 5 ml bicarbonate of soda
- Pinch of fine salt
- 15 ml cinnamon, ground
Method
- Beat the sugar and butter until light and creamy.
- Add the eggs, one at a time, mixing well after each addition.
- While beating, slowly add the oil.
- Add the yoghurt and the chocolate.
- Sift the dry ingredients together and mix into the wet ingredients.
- Spoon the mixture into standard cupcake cases. Fill each case ¾ full
- Bake for 15-20 minutes or until a skewer comes out clean.
