Chicken and Pineapple Kebabs

Ingredients

Kebabs

  • 750g chicken fillet cut into cubes
  • 1 pineapple, peeled and cut into cubes
  • 1 Red pepper, cubed
  • 1 Green Pepper, cubed
  • 1 Red onion, cut into pieces

Marinade

  • 5ml Fresh Ginger, crushed
  • 5ml Chicken Spice
  • 5ml mild Curry Powder
  • 30ml Chutney
  • 100ml Huletts Maple Syrup
  • 50ml oil
  • 25ml water

Method

  1. Mix marinade ingredients together and season to taste.
  2. Stir in the chicken cubes and marinate for 20 minutes.
  3. Thread cubes of chicken, pineapple and pepper onto wooden kebab sticks that have been soaked in water.
  4. Braai the Kebabs over hot coals for 3- 5 minutes per side until cooked through or oven bake at 180 c for 15 – 20 minutes or until cooked through.
  5. You can also grill under a hot grill turning regularly.
  6. Use marinade to baste the kebabs while cooking.
