Ingredients

Chai cookies

  • 1 cup softened butter
  • 1 cup Huletts castor sugar
  • 1 cup Huletts brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 3 cups cake flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 3 Tbs Chai powder

To decorate (optional):

  • 100g dark chocolate, melted

Method

  1. Preheat oven to 180C.
  2. Cream together the butter, castor sugar and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Mix together flour, bicarbonate of soda, salt and chai powder.
  5. Combine dry and wet ingredients to form the cookie dough.
  6. Refrigerate the dough for 30 minutes until firm.
  7. Measure 2 tablespoonfuls of the dough and shape into balls before placing onto a greased tray and press down gently to flatten, leaving space between each cookie.
  8. Bake for about 10 minutes in the preheated oven until edges are golden brown.
  9. Leave cookies to cool completely before drizzling with dark chocolate.
