Ingredients
Chai cookies
- 1 cup softened butter
- 1 cup Huletts castor sugar
- 1 cup Huletts brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 3 cups cake flour
- 1 tsp bicarbonate of soda
- 1/2 tsp salt
- 3 Tbs Chai powder
To decorate (optional):
- 100g dark chocolate, melted
Method
- Preheat oven to 180C.
- Cream together the butter, castor sugar and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla.
- Mix together flour, bicarbonate of soda, salt and chai powder.
- Combine dry and wet ingredients to form the cookie dough.
- Refrigerate the dough for 30 minutes until firm.
- Measure 2 tablespoonfuls of the dough and shape into balls before placing onto a greased tray and press down gently to flatten, leaving space between each cookie.
- Bake for about 10 minutes in the preheated oven until edges are golden brown.
- Leave cookies to cool completely before drizzling with dark chocolate.
