Ingredients

Berry Compote with Molasses

  • 500 g mixed berries, frozen can also be used
  • 60 ml (¼ cup) water
  • 45 ml (3 T) Huletts Molasses

Method

  1. Place the berries, water and molasses in a saucepan over low heat and allow to simmer for 12-15 minutes.
  2. Remove from heat and leave to cool.
  3. Store in a sterilised jar.
  4. Serving suggestions: - Delicious served with scones and cream with tea. - Serve as a topping with any caramel, rice or bread pudding. - Serve with plain yoghurt and fresh fruit for breakfast.

Top tips

CREAM CHEESE:

Place the required portion size, as stated in your recipe, in a plastic bag. Place plastic bag in lukewarm water and allow to gently reach room temperature. Avoid HOT water as it can cause cream cheese to separate.

Master the frozen fruit

Simply coat frozen fruit in a small amount of flour before adding to pie or cake mixtures. The flour prevents the fruit from sinking to the bottom of the pan.

Sugar lasts!

When sugar is stored properly (in a cool, dry place) it will last for years, and is often used as a natural preservative, for example in canned fruit, jams and marmalades.
