Sudden craving for banana bread but your fruit isn't ripe enough? Simply pop the bananas in a pre-heated oven at 150°C for 40 minutes. The skins might blacken but the fruit will soften up perfectly.

Ingredients
BANANA BREAD WAFFLES
- 300 ml cake flour
- 190 ml Huletts Castor Sugar
- 5 ml baking powder
- 2 ½ ml bicarbonate of soda
- 5 ml mixed spice
- 2 ml fine salt
- 250 ml mashed banana (2 to 3 small bananas)
- 125 ml sunflower oil, plus extra for brushing waffle iron
- 125 ml maas
- 5 ml pure vanilla essence
- 2 extra large eggs
- 125 ml cream, whipped to firm peaks
- 60 ml Huletts Golden Syrup
- 1 apple, cut into matchsticks
- 45 ml coconut shavings, toasted

Method
- Combine the flour, sugar, baking powder, bicarbonate of soda, mixed spice and salt.
- Whisk together the banana, oil, maas, vanilla essence and eggs.
- Fold the banana mixture into the flour mixture until just combined - there may be some lumps.
- Spray the preheated waffle iron with a non-stick spray.
- Fill each section to about ¾ full (there should still be some waffle iron showing).
- Cook the waffles until golden brown, about 4-6 minutes.
- Keep the waffles warm in the oven or covered with foil on a plate while you cook the remaining batter.
- Place 2 waffles on each plate, top them with the whipped cream, drizzle with syrup and then decorate with the apple matchsticks and coconut shavings.
