Ingredients

Blue cheese and maple glazed bacon bread

  • 125g streaky bacon, chopped
  • 4 Tbs Huletts Maple Syrup
  • 500g self-raising flour
  • 1/2 Tbs salt
  • 340ml beer
  • Water
  • 100g blue cheese, crumbled
  • 30g parsley, chopped
  • 4 spring onions, chopped
  • 1 egg, beaten

Method

  1. Place bacon pieces into a hot pan with a drizzle of oil, then fry until crispy.
  2. Stir the maple syrup into the bacon, then set aside to cool.
  3. Pre - heat the oven to 180C. Grease a loaf tin.
  4. Mix flour and salt in a mixing bowl. Stir in the beer and add a little water if the dough is to dry.
  5. Mix in the blue cheese, cooled maple bacon, parsley and spring onions.
  6. Transfer the dough to the loaf tin then brush with beaten egg.
  7. Bake for about 90 minutes, test with a skewer for doneness after about one hour when the top is golden brown - if the skewer comes out clean, remove from the oven and cool slightly before slicing to serve.

Top tips

No Baking Powder?

Substitute 1 tsp Baking Powder with ½ Tsp Cream of Tartar + ¼ Tsp Baking Soda.

EGGS:

Place in warm water while preparing other ingredients for the recipe.
