Our Caramelized Pineapple and Mango Lassi is the perfect thirst quencher for lunch!





Caramelized Pineapple and Mango Lassi

  • 3 cups chopped pineapples
  • 4 Tbs Huletts yellow sugar (plus extra for decorating)
  • 2 cups mangoes, peeled and chopped
  • 2 limes, juiced
  • 200g plain yoghurt
  • 2 cups crushed ice


  1. Place the pineapples and sugar into a pot, then place on medium heat to cook until sugar is melted and caramelized with the pineapple. Set aside to cool.
  2. Decorate serving glasses by rubbing the rim with lime, then dipping into the yellow sugar.
  3. Place the cooled pineapple, mangoes, lime juice, yoghurt and ice into a blender, then blend until smooth.
  4. Pour into decorated glasses and serve immediately.

Top tips

Freeze fruit the right way…

Coat your fresh fruit with a layer of sugar before freezing, or freeze them in sugar syrup.

Master the frozen fruit

Simply coat frozen fruit in a small amount of flour before adding to pie or cake mixtures. The flour prevents the fruit from sinking to the bottom of the pan.
