Caramelised Onion & Mushroom Potato Bake
Our Caramelised Onion and Mushroom Creamy Potato Bake is a winning winter warmer side dish!

Ingredients
- 1 small onion, finely chopped
- 1 clove of garlic, chopped
- 125g button mushrooms, sliced
- 30ml Huletts SunSweet Brown Sugar
- 30ml cooking oil
- 30ml vegetable stock
- 5ml flour
- 60ml milk
- 4-5 medium potatoes thinly sliced
- 250ml cream
Method
- Preheat the oven to 180⁰C.
- Fry the onion, garlic and mushrooms with the sugar & oil until brown and caramelised.
- Add the vegetable stock and simmer.
- Make a paste with the flour and milk.
- Add the paste to the caramelised mixture to thicken it.
- In a baking or casserole dish, layer the potatoes with the caramelised mixture.
- Pour over the cream and bake for 1 - 1 ½hours, or until the top is a lovely golden brown and the potatoes are cooked.
