Caramelised Onion & Mushroom Potato Bake

Our Caramelised Onion and Mushroom Creamy Potato Bake is a winning winter warmer side dish!

Ingredients

  • 1 small onion, finely chopped
  • 1 clove of garlic, chopped
  • 125g button mushrooms, sliced
  • 30ml Huletts SunSweet Brown Sugar
  • 30ml cooking oil
  • 30ml vegetable stock
  • 5ml flour
  • 60ml milk
  • 4-5 medium potatoes thinly sliced
  • 250ml cream

Method

  1. Preheat the oven to 180⁰C.
  2. Fry the onion, garlic and mushrooms with the sugar & oil until brown and caramelised.
  3. Add the vegetable stock and simmer.
  4. Make a paste with the flour and milk.
  5. Add the paste to the caramelised mixture to thicken it.
  6. In a baking or casserole dish, layer the potatoes with the caramelised mixture.
  7. Pour over the cream and bake for 1 - 1 ½hours, or until the top is a lovely golden brown and the potatoes are cooked.
